Tomato Herb Snacks (Print Version)

# Ingredients:

→ Fresh Produce

01 - Two big tomatoes, chopped small (roughly 250g)
02 - Half of a red onion, diced finely
03 - Two garlic cloves, smashed or minced

→ Fresh Herbs & Seasonings

04 - Half a bunch of fresh dill (about 10g), chopped
05 - Half a bunch of parsley, also chopped finely (about 15g)
06 - Zest from one lemon
07 - 1/2 teaspoon of salt, or adjust to your liking
08 - As much black pepper as you prefer

→ Dry Ingredients

09 - 85g of plain flour
10 - 1/2 teaspoon baking powder

# Instructions:

01 - Dice the tomatoes into small chunks and place them into a roomy mixing bowl. This will be the base for everything else.
02 - Toss the diced onion, minced garlic, chopped herbs, lemon zest, salt, and pepper into the bowl with the tomatoes. Mix in the flour and baking powder until it all comes together like dough.
03 - Pour enough olive oil to cover the bottom of a pan, and let it heat on medium. Scoop spoonfuls of the mixture into the oil, letting them cook for a few minutes until they get a lovely golden brown. Flip them, repeat on the other side, and you're good!
