Cheesecake Crepe Sushi (Print Version)

# Ingredients:

→ Cream Filling

01 - 8 ounces of cream cheese, brought to room temperature
02 - 1/4 cup of white sugar
03 - 1 teaspoon of vanilla essence
04 - 1 cup of heavy cream for whipping

→ Fruit Layer

05 - 1 cup of diced fresh strawberries
06 - 2 tablespoons of sugar

→ Crust & Assembly

07 - 1 1/2 cups of crushed graham crackers or shortbread cookies
08 - 1/4 cup of melted unsalted butter
09 - 6 thin crepes or cake layers
10 - Powdered sugar to sprinkle on top

# Instructions:

01 - Mix softened cream cheese with the sugar and vanilla until it turns smooth and creamy.
02 - In another bowl, beat the heavy cream until it forms stiff peaks. Then gently fold this into the cream cheese mixture.
03 - Stir together the chopped strawberries and sugar in a bowl, letting them rest for 10 minutes so the juices come out.
04 - Combine the crushed cookies or crackers with the melted butter until it feels like damp sand.
05 - Spread the cream filling, sprinkle the cookie crumbs, and add the strawberries on each crepe. Roll them up tightly like sushi rolls.
06 - Wrap each rolled crepe in plastic and chill them for at least 1 hour in the fridge. Slice into bite-sized pieces and dust with powdered sugar before serving.

01 - Chilling is necessary to make clean slices
02 - You can use either shortbread cookies or graham crackers for the base layer
