Spicy Creamy Chicken (Print Version)

# Ingredients:

01 - 1 1/2 pounds of chicken breast.
02 - 1 1/2 cups chopped bell pepper.
03 - 1 1/2 cups celery, diced.
04 - 1 tablespoon minced garlic.
05 - 3 cups chicken stock.
06 - 1 cup diced onion.
07 - 1 tablespoon butter or olive oil.
08 - 2 teaspoons your favorite hot sauce.
09 - 1 cup carrots, cut into small pieces.
10 - 1 (14 ounce) can of fire-roasted tomatoes, liquid removed.
11 - 8 ounces softened cream cheese.
12 - 1/4 cup of heavy cream.
13 - 2 tablespoons Cajun or Old Bay seasoning.

# Instructions:

01 - Warm the oil in a big pot and cook the garlic, onion, carrots, celery, and bell pepper for 3-4 minutes until soft.
02 - Stir in the chicken, tomatoes, stock, and spices. Cover and let it gently cook for half an hour.
03 - Take out the chicken, shred it, and mix cream and softened cream cheese into the soup.
04 - Mix everything well until the cream cheese melts, then put the shredded chicken back in.
05 - If you'd like, sprinkle on some cheddar, green onions, and a little more hot sauce before eating.
