Stir together the peanut butter and sugar until it's smooth.

Lay out 30 crackers on a tray lined with parchment paper.

Spoon 2 scoops of the peanut butter mixture onto each cracker.

Place another cracker on top of each and press lightly.

Put them in the freezer for about 15-20 minutes while you melt chocolate.

Microwave the chocolate in a bowl for 30 seconds at a time, stirring after each interval until melted.

Lay fresh parchment paper on a clean baking tray.

Dip half of the chilled cookies into the melted chocolate. Gently shake off the extra.

Lay the chocolate-coated cookies on the pan. Quickly sprinkle on decorations if using.

Dip the rest of the cookies and chill everything for 45-60 minutes until firm.
