Grab your mandoline or peeler and cut the cucumbers into ribbons or thin slices. Toss them into a pitcher.

Drop in the mint leaves and lightly press them into the cucumbers to let out some flavor.

Squeeze juice from one and a half lemons (or limes). Keep the other half aside for later.

Pour in the sparkling lemon water and give it a good stir.

Pour over a glass of ice and pop a few mint sprigs or lemon/lime slices on top if you want to make it fancy.
