# Ingredients:

→ Seasoning Mix

01 - 1/4 teaspoon garlic powder
02 - 1/4 teaspoon ground cumin
03 - 1/2 teaspoon smoked paprika
04 - 1/4 teaspoon cayenne pepper
05 - 1/4 teaspoon onion powder
06 - 1/2 teaspoon kosher salt
07 - 1/4 teaspoon dried thyme

→ Main Ingredients

08 - 2 cups pre-shredded coleslaw mix
09 - 1 salmon fillet (10 ounces)
10 - 1 cup cherry tomatoes, cut up
11 - 4 small tortillas for fajitas
12 - 1 tablespoon olive oil for cooking
13 - 1/2 cup crumbled feta cheese

→ Zesty Mayo Sauce

14 - 1 tablespoon hot sauce
15 - 1 teaspoon lime juice, freshly squeezed
16 - 1/4 cup mayonnaise
17 - A pinch of salt, as needed

# Instructions:

01 - Combine all the spice mix ingredients in a bowl. Sprinkle the mix onto the salmon fillet (both sides, if there's no skin). Drizzle olive oil on top, then let it rest for 10 minutes on the counter.
02 - Warm a non-stick pan with some oil over medium heat. Place the salmon into the pan with the flesh side down and cook for about 3 minutes. Flip it over and cook for another 2-3 minutes, adjusting for how you like it cooked.
03 - Allow the cooked salmon to cool for about 4-5 minutes. Use a fork to break it into smaller chunks.
04 - Combine the mayo, hot sauce, and lime juice in a small bowl. Taste and sprinkle some salt if needed.
05 - Heat up the tortillas. Layer them with the salmon, coleslaw mix, feta cheese, tomatoes, and finish with a drizzle of that spicy mayo.

# Notes:

01 - Tortillas for fajitas are usually around 4.5 to 6.5 inches wide.
02 - If you don’t have coleslaw mix, use any cabbage or leafy greens shredded finely.
03 - Add-ons like sliced avocados, chopped cilantro, green onions, jalapeños, or pickled onions can add more flavor.
