Protein Cookie Balls (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 cup of 2% fat cottage cheese
02 - 2 tablespoons of sugar-free maple syrup (like Lakanto)
03 - 1 teaspoon of pure vanilla extract
04 - 1 1/2 cups almond flour (or heat-treated all-purpose flour if preferred)

→ Protein & Coating

05 - 1/4 cup of vanilla protein powder or any other flavor you like
06 - 1 1/2 cups of sugar-free dark chocolate chips (such as Lily's), separated
07 - 1 teaspoon of coconut oil

# Instructions:

01 - Blend your cottage cheese until it’s silky smooth using either a food processor or a blender.
02 - Take 1 cup of chocolate chips and reserve them for later. In a medium mixing bowl, stir the smooth cottage cheese along with all the other ingredients thoroughly until combined.
03 - Let the mixture chill in your fridge for 30 minutes so it firms up enough to work with.
04 - Put parchment paper on a baking sheet. Use a cookie scoop to divide and roll the cold dough into balls of the same size. Arrange them on the sheet and freeze them for a minimum of 20 minutes.
05 - Using 15-second intervals in the microwave, melt the set-aside chocolate chips and stir between each interval until smooth. Coat each frozen ball by dipping it into the melted chocolate, then place the coated balls back onto the parchment paper. Chill them in the fridge until the chocolate hardens.
