Turn your oven on to 425°F. Slice the cabbage into 8 wide pieces (around 1-inch thick), making sure the core remains attached.

In a small bowl, stir together the Parmesan, soy sauce, garlic, olive oil, salt, and vinegar.

Put the cabbage slices cut-side down on a rimmed baking sheet. Coat all sides with the Parmesan-garlic mixture using a brush.

Bake the cabbage until the edges turn brown, about 20 minutes. Flip them over and cook for 10 more minutes, or until they're tender and golden.

Sprinkle with extra Parmesan and red pepper flakes if you'd like some heat.
