Frozen Yogurt Peanut Bars (Print Version)

# Ingredients:

01 - 1/2 cup smooth peanut butter.
02 - 1 teaspoon vanilla essence.
03 - 1 cup plain Greek yogurt.
04 - 2 tablespoons whole peanuts (salted).
05 - 1 tablespoon honey or maple syrup.
06 - 2 tablespoons coconut oil.
07 - 1 cup chocolate pieces (6 oz).
08 - Other: Silicone mat or wax paper.
09 - Other: Wooden popsicle sticks.

# Instructions:

01 - Cover a baking sheet with silicone mat or wax paper.
02 - Mix peanut butter and yogurt in a bowl. Pour in honey and vanilla, then stir until blended and creamy.
03 - Spread out half the filling in blobs. Place a stick in each one. Add the rest of the mixture on top, pressing gently. Sprinkle peanuts on top. Put in freezer for at least 2 hours.
04 - Heat coconut oil and chocolate together until melted. Dip each frozen bar into the mixture. Pop them back in the freezer to set.

# Notes:

01 - Toss in mini chocolate chips when mixing if you'd like.
02 - Let them soften for about 5-10 minutes before eating.
03 - Keeps fresh for up to a month in the freezer.
04 - Stick with regular peanut butter, not the natural one.
