Sweet Potato Rounds (Print Version)

# Ingredients:

01 - 3 big sweet potatoes.
02 - 3 tbsp of olive oil.
03 - 1/2 tsp of cinnamon.
04 - 1/2 tsp of cumin powder.
05 - 1/2 tsp of paprika (smoked kind).
06 - 1/2 tsp of coriander powder.
07 - 1/2 tsp red chili flakes.
08 - 1 tsp of salt (use kosher).
09 - 1/2 tsp black ground pepper.
10 - 1 tbsp honey (mild or spicy).
11 - A third of a cup of feta, crumbled.
12 - Chives or parsley for garnish.
13 - Extra honey for topping when serving.

# Instructions:

01 - Rinse and pat the potatoes dry, then cut into slices about 1/3-inch thick. Heat your oven to 425°F.
02 - Grease the sheet pan, rub oil over the potato slices, sprinkle with the spices and drizzle on the honey. Spread the slices out evenly.
03 - Cook for 20 minutes, turn the slices over, then roast for another 20 to 25 minutes until they're crisp and golden.
04 - Move the crispy potato slices to a plate. Sprinkle on salt, drizzle with honey, scatter feta and herbs on top to finish.

# Notes:

01 - Best if eaten right away.
02 - Space out the slices on your sheet to keep them crisp.
03 - For some heat, use spicy honey.
04 - Keep an eye on them to avoid burnt edges.
05 - A delicious option that’s not too heavy.
06 - Perfect as a side or snack.
