Ham and Cheese Delight (Print Version)

# Ingredients:

→ Base

01 - 3 tablespoons of cooking oil (vegetable)
02 - 2 soft corn tortillas, sliced into small strips or squares
03 - 4 to 5 large eggs, whisked until blended

→ Fresh Vegetables

04 - 1 medium-sized red tomato, chopped
05 - 1 jalapeño, chopped finely
06 - 1 small white or yellow onion, diced
07 - 1 small red bell pepper, cut into pieces

→ Cheese & Seasonings

08 - A half cup of shredded pepper jack or Monterey Jack cheese
09 - Add black pepper and salt according to your taste

→ Optional Toppings

10 - Spicy red chili flakes
11 - Sliced fresh hot peppers
12 - Sliced avocado
13 - A few dashes of your favorite hot sauce

# Instructions:

01 - Heat oil in a big frying pan. Drop in the tortilla strips and fry them until golden and crispy. This will take around 4 or 5 minutes. Make sure to flip 'em now and then. Take them out and put them on paper towels. Sprinkle some salt while they’re still hot.
02 - Using the same pan and oil, add your diced onions and peppers. Let them cook for around 5 minutes until they’re soft and smell great.
03 - Throw in your diced tomato and pour the whisked eggs over the mix. Add a pinch of salt and pepper, then gently stir everything together.
04 - Let the eggs cook for a couple of minutes, stirring every so often. Stop when they’re softly set but still nice and creamy.
05 - Take the pan off the heat and mix in the crispy tortilla strips and cheese. Add any toppings you like, such as chili flakes, peppers, avocado slices, or hot sauce. Enjoy!

01 - If you're short on time, swap tortillas for store-bought tortilla chips.
02 - Boost the meal by adding your choice of protein like chorizo.
03 - A spoonful of your favorite salsa can really take this dish up a notch.
