Spritz your silicone muffin pan with a bit of nonstick spray. Preheat the oven to 350°F.

Toss the eggs, cottage cheese, cheddar, salt, and pepper into a blender. Blend until it’s nicely smooth.

Pour the blended egg mixture into the muffin cups, filling them just over halfway. Sprinkle bacon bits and chives on top, if you’re using those extras.

Let them bake in the oven for 20–22 minutes, then let the egg bites cool enough so they pop out of the silicone tray easily.
