Egg & Cottage Cheese Bites (Print Version)

# Ingredients:

→ Base Ingredients

01 - 8 or 9 eggs (big ones are best)
02 - 1 cup of creamy cottage cheese
03 - ½ cup of grated cheddar
04 - A pinch of salt (about ¼ teaspoon)
05 - A dash of black pepper (roughly ⅛ teaspoon)

→ Optional Toppings

06 - ⅓ cup bacon that’s already cooked
07 - 2 tablespoons of chopped chives

# Instructions:

01 - Spritz your silicone muffin pan with a bit of nonstick spray. Preheat the oven to 350°F.
02 - Toss the eggs, cottage cheese, cheddar, salt, and pepper into a blender. Blend until it’s nicely smooth.
03 - Pour the blended egg mixture into the muffin cups, filling them just over halfway. Sprinkle bacon bits and chives on top, if you’re using those extras.
04 - Let them bake in the oven for 20–22 minutes, then let the egg bites cool enough so they pop out of the silicone tray easily.

# Notes:

01 - You can choose to leave out the bacon and chives if you like.
02 - These are perfect for a meal prep session and they freeze great too.
