Broccoli Cheese Rice (Print Version)

# Ingredients:

01 - 1 1/2 cups of fast-cooking white rice.
02 - 1 stick (1/2 cup) of unsalted butter.
03 - 1 medium white onion, diced into small pieces.
04 - 4 cups of fresh broccoli, broken into small florets.
05 - 1 can of chicken cream soup (10.5 oz).
06 - 8 oz of processed cheese (Velveeta), split in half.
07 - 1/2 cup regular milk.
08 - 1/3 cup of potato chips, crushed.

# Instructions:

01 - Preheat your oven to 350°F and prepare the rice according to the instructions on the package.
02 - Melt the butter, then cook the onion and broccoli together until the onion softens and looks transparent.
03 - Stir in the chicken soup, half of the Velveeta cheese, and milk. Keep mixing until the cheese has melted into the sauce.
04 - Mix the cooked rice with the sauce, then pour everything into a greased 8x8 baking dish.
05 - Sprinkle the rest of the cheese and all the crushed potato chips on top. Bake for 30 minutes, or until you see it bubbling.

01 - Frozen broccoli can be swapped in if needed.
