Cozy up with a hearty bowl of apple cinnamon oatmeal. Filled with soft apple chunks, hearty oats, and your favorite warm spices, it's a comforting way to start the morning.

# What You’ll Need:

01 - 1/2 teaspoon of ground cinnamon.
02 - 1/8 teaspoon of nutmeg (optional).
03 - 1 tablespoon of water.
04 - 2 diced sweet apples (e.g., Honeycrisp).
05 - 2+ tablespoons of maple syrup or brown sugar.
06 - 1 teaspoon of vegan butter or neutral oil.
07 - Pinch of kosher salt.
08 - 1/4 teaspoon kosher salt.
09 - 1/2 teaspoon of vanilla extract (optional).
10 - 1/4 cup of chopped walnuts or pecans for garnish (if you like).
11 - 1/2 teaspoon of ginger powder (optional).
12 - 2 cups of rolled or quick oats.
13 - 1 teaspoon ground cinnamon.
14 - 2 cups of non-dairy milk (unsweetened).
15 - 2 cups of water. Use more milk if you prefer creamier oatmeal.

# Step-by-Step Guide:

01 - Put your saucepan on medium heat and let the butter or oil melt. Toss in the apples, water, cinnamon, salt, and sweetener. Stir now and then while it cooks for about 5-7 minutes. Once soft and see-through, scoop out half and save them for later.
02 - Dump the oats, spices, milk, water, and sweetener into the saucepan with the leftover apples. Turn the heat up high until it boils, then drop it to medium. Keep stirring to stop sticking and let it simmer for 5-7 minutes till it thickens.
03 - Try it to see if it’s sweet enough for you, and adjust if needed. Dish it up, putting those saved apples on top and sprinkling nuts if you like. Store extras in your fridge for up to 5 days and reheat on the stove later with a splash of water or milk.

# Additional Notes:

01 - Feel free to tweak by adding your favorite fruits, dried bits, or even seeds for variety.
