Air Fryer Eggplant (Print Version)

# Ingredients:

01 - 1 big eggplant cut into 1 inch chunks with skin removed
02 - 2 tbsp good quality avocado oil for cooking

→ Seasonings

03 - 1 tsp dried rosemary leaves
04 - 1 tsp dried thyme sprigs
05 - 1/4 tsp kosher salt plus more for drawing out moisture
06 - 1/2 tsp garlic powder
07 - 1/2 tsp smoky paprika

# Instructions:

01 - Sprinkle salt on the eggplant chunks and let sit for 15 to 30 mins. Use paper towels to soak up any liquid.
02 - Mix the eggplant pieces with avocado oil and spices until everything is nicely coated.
03 - Set air fryer to 400°F and cook for 18 mins total. Shake basket halfway to get even crispiness.
