Zesty Coleslaw (Print Version)

# Ingredients:

01 - 1/2 cup of corn (pan-seared or grilled).
02 - 14-ounce packet of pre-shredded coleslaw.
03 - 1/4 cup sour cream.
04 - 3/4 cup of mayonnaise.
05 - 1 jalapeño, finely chopped.
06 - 1/2 cup diced red bell pepper.
07 - 1 1/2 tablespoons taco spice mix.
08 - A handful of cilantro, chopped.
09 - 2 tablespoons of lime juice.
10 - 1/2 cup rinsed and drained black beans.

# Instructions:

01 - Toss the coleslaw mix, peppers, beans, seared corn, cilantro, and jalapeño in a big bowl so everything is well mixed.
02 - In another smaller bowl, stir together the mayonnaise, sour cream, lime juice, and taco seasoning until creamy.
03 - Drizzle the creamy mixture over the veggie mix, then give it a big stir to coat everything evenly.
04 - Dig in right away or pop it in the fridge for half an hour to let the flavors come together even more.
