Grilled Cheese Delight (Print Version)

# Ingredients:

01 - Two thick slices of sourdough bread
02 - One tablespoon of butter (unsalted)
03 - Two teaspoons of mayo
04 - 3.5 ounces of sharp cheddar, grated fresh
05 - 1 ounce of freshly shredded Gruyère cheese

# Instructions:

01 - Warm up your cast-iron pan on a low flame. Slice your bread to 1/2 inch thickness and shred the cheeses.
02 - Take a teaspoon of mayonnaise and spread it evenly onto one side of each bread slice.
03 - Melt the butter in the hot skillet, place a bread slice with mayo-side down, layer the cheese, and close it with the second slice mayo-side up.
04 - Cover the pan and let it cook for about 2 to 3 minutes. Check for a crispy, golden crust on the underside.
05 - Turn the sandwich over, cover it again, and cook for another 2 minutes or until the cheese completely melts and the other side browns.
06 - Slice it in half at a diagonal angle and serve it right away while the cheese is gooey.
