Warm up your cast-iron pan on a low flame. Slice your bread to 1/2 inch thickness and shred the cheeses.

Take a teaspoon of mayonnaise and spread it evenly onto one side of each bread slice.

Melt the butter in the hot skillet, place a bread slice with mayo-side down, layer the cheese, and close it with the second slice mayo-side up.

Cover the pan and let it cook for about 2 to 3 minutes. Check for a crispy, golden crust on the underside.

Turn the sandwich over, cover it again, and cook for another 2 minutes or until the cheese completely melts and the other side browns.
