Tater Tot & Breakfast (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2 cups tater tots (keep them frozen)
02 - 8 breakfast sausage links, remove casings
03 - 8 eggs, beat them lightly
04 - ⅓ cup of half-and-half
05 - A couple of tablespoons of olive oil
06 - Kosher salt and black pepper (freshly cracked)

→ Assembly Ingredients

07 - One 16-ounce can of refried beans
08 - 8 tortillas, 8 inches each (flour-based)
09 - 1 cup of cheddar cheese, shredded
10 - 1 cup of shredded Monterey Jack cheese
11 - Two Roma tomatoes, diced up
12 - A handful (¼ cup) of fresh cilantro, chopped

# Instructions:

01 - Heat your oven up to 400°F. Bake your frozen tater tots for about 20 to 25 minutes, or until they look crisp and golden.
02 - Pour olive oil into a hot skillet over medium-high. Break the sausages apart as they cook, letting them brown for 3-5 minutes. Be sure to save 1 tablespoon of the fat in the pan.
03 - Use the same skillet to scramble the eggs over medium heat. Stir in the half-and-half when the eggs start to set. Add salt and pepper to taste, and let it finish cooking for 3-5 minutes until they’re soft and a little creamy.
04 - Spread refried beans onto each tortilla. Layer them with tater tots, sausage, egg mixture, the two cheeses, diced tomatoes, and cilantro. Wrap up tightly after folding in the sides.
05 - Place each burrito with the seam-side down on a baking sheet. Bake them at 12 to 15 minutes until heated all the way through and the cheese melts perfectly.

# Notes:

01 - You can freeze these burritos for a maximum of 3 months if wrapped in foil or plastic wrap.
02 - To heat a frozen burrito: microwave it for 1-2 minutes on each side, then crisp it up in either an oven or skillet if you’d like.
