Tangy Grapefruit Bars (Print Version)

# Ingredients:

→ Base

01 - ½ cup sugar
02 - ½ cup soft butter
03 - 1 cup plain flour
04 - Pinch of salt (⅛ tsp)

→ Grapefruit Layer

05 - ¾ cup sugar
06 - 2 eggs, large
07 - 3 tbsp plain flour
08 - 1 grapefruit, zest and ¼ cup juice
09 - Confectioner’s sugar for sprinkling

# Instructions:

01 - Preheat oven to 350°F. Line your 8x8 pan with two strips of parchment crisscrossed.
02 - Mix together the butter and sugar until fluffy, about 3 mins. Stir in salt and flour. Press dough evenly into pan.
03 - Pop into oven for 15-18 mins until golden around edges. Put aside to cool down a bit.
04 - Whisk sugar and eggs until slightly thick, about a minute. Add zest, juice, and flour. Spread over the warm crust.
05 - Bake again 18-20 mins until it's golden and set. Cool totally, then slice into 16 pieces.

# Notes:

01 - Store layers with parchment strips in an airtight box.
02 - When baked, the center shouldn’t wobble.
03 - Go for fresh grapefruit—way better flavor.
