Taco Meatloaf (Print Version)

# Ingredients:

01 - 6 ounces tortilla chips.
02 - 2 lbs minced beef.
03 - 2 large eggs.
04 - 1 pack taco seasoning.
05 - 1 1/2 cups spicy black bean salsa.
06 - 1 tablespoon garlic seasoning.
07 - 1 tablespoon salt.
08 - 1 tablespoon black pepper.
09 - 2 cups shredded Mexican cheese blend.

# Instructions:

01 - Turn the oven on to 350°F.
02 - Put tortilla chips in a bag and mash them into crumbs.
03 - In a large bowl, mix the ground beef, eggs, and crushed chips.
04 - Pour in 1/2 cup salsa, seasoning blend, garlic, salt, and pepper.
05 - Use your hands to blend everything evenly.
06 - Stir in 1 cup of cheese.
07 - Line the loaf tin with foil and spray it with a non-stick spray.
08 - Pack the meat mixture firmly into the tin.
09 - Cover the top with the rest of the salsa.
10 - Bake for 40 minutes in the oven.
11 - Sprinkle the remaining cheese across the top.
12 - Bake another 10-15 minutes, until it reaches 160°F.
13 - Leave it to sit for 5 minutes before handling.
14 - Use the foil to lift it out of the pan.
15 - Slice it up and dig in!

# Notes:

01 - Spice it up with some jalapeños.
02 - Switch up the salsa or cheese for variety.
03 - You can prep it in advance and bake later.
