Sweet Lentil Stew (Print Version)

# Ingredients:

01 - 6 cups peeled and cubed sweet potatoes.
02 - 2 cups red lentils, dried.
03 - 1 small shallot, chopped finely.
04 - 3 tablespoons of red curry paste (Thai-style).
05 - 3/4 teaspoon of kosher salt.
06 - 4 cups broth with reduced sodium (vegetable-based).
07 - 1 teaspoon of ground ginger.
08 - 6 ounces of tomato paste.
09 - 1 cup of light coconut milk.
10 - 1 cup plain water.
11 - 1 tablespoon garam masala spice.
12 - 1/2 tablespoon of coconut sugar.
13 - 1 teaspoon turmeric powder.
14 - 3 minced garlic cloves.
15 - Cooked quinoa or brown rice to serve on.
16 - Cilantro leaves (optional garnish).
17 - Lemon or lime wedges (optional).

# Instructions:

01 - Spray the slow cooker lightly with cooking spray. Wash lentils and set aside.
02 - Toss in everything except the coconut milk. Give it a good mix.
03 - Set to High for 3-4 hours, or Low for 6-7 hours, until the potatoes and lentils soften completely.
04 - Pour in the coconut milk and stir. Adjust the texture if needed. Dish it up over grains, garnish with cilantro, and enjoy!
