Smothered Chicken Dish (Print Version)

# Ingredients:

01 - 1 teaspoon smoked paprika.
02 - 1 tablespoon garlic powder.
03 - 1 teaspoon celery seed.
04 - 1 1/2 cups plain flour.
05 - 2 teaspoons fresh minced garlic.
06 - 1 teaspoon poultry spice mix.
07 - 1 medium onion, diced small.
08 - 1/4 cup cooking oil.
09 - 1 pound chicken thighs or drumsticks.
10 - 1 cup full-fat milk.
11 - 1 teaspoon fine salt.
12 - 1 teaspoon ground black pepper.
13 - 2 cups stock made from chicken.
14 - 1 tablespoon dried onion powder.

# Instructions:

01 - Rinse the chicken well and set it aside.
02 - Combine all your spices with the flour in a big bowl. Keep a bit of this mixture for your gravy later.
03 - Give each chicken piece a good coating with the seasoned flour mix.
04 - In a wide pan, heat up the oil and fry the chicken until it gets a nice golden color. Remove it from the pan once done.
05 - Cook those chopped onions until soft, about 2 minutes. Stir in the garlic and let it cook for another minute. Take both out of the pan.
06 - Mix the leftover seasoned flour into the drippings in the pan. Slowly whisk in the milk and broth until smooth.
07 - Put the chicken, onions, and garlic back into the pan. Cover it up, and cook for 30-35 minutes, flipping the chicken now and then.
