01 - Chop up 6 skinless, boneless chicken thighs.

# Step-by-Step Guide:

01 - Season the chicken thighs with half the salt and pepper. In a big pan, heat the oil over medium-high. Add the chicken and cook for about 6-8 minutes until the pink is gone. Move it into a 6-quart slow cooker after that.
02 - Using the same pan, soften the celery, carrots, and onion for 6-8 minutes. Stir in the garlic, tomato paste, and the rest of the seasoning. Keep it going for 1 more minute. Add the plain flour and stir for another minute before stopping.
03 - Mix in 2 cups of chicken broth while whisking, letting it thicken. Pour that mix into the slow cooker. Add bay leaves, thyme, and what's left of the chicken broth.
04 - In a bowl, combine the flour, baking powder, salt, and pepper for the dumplings. Mix in milk and melted butter to make a nice, thick mixture. Drop spoonfuls (about 1/4 cup size) right over the chicken in the slow cooker.
05 - Keep the slow cooker covered on low heat, letting it bubble away and letting the dumplings set for 6-8 hours. Toss out the bay leaves before serving. Let the dish rest uncovered for 15 minutes, then dig in.
