Easy Lentil Soup (Print Version)

# Ingredients:

01 - 4 garlic cloves, minced small.
02 - 2 big potatoes, peeled and chopped.
03 - 2 spoons of butter.
04 - 2 celery stalks, sliced thin.
05 - 8 cups of chicken or veggie broth.
06 - 2 large carrots, peeled and sliced.
07 - 2 cups of green lentils, washed off.
08 - 1 onion, diced up.

# Instructions:

01 - Heat up butter in a large pot. Toss in garlic, celery, potatoes, onion, and carrots. Let them soften up for about 5 or 6 minutes.
02 - Pour in the lentils and broth. Sprinkle in some salt and pepper. Let it come to a slow simmer.
03 - Let it cook for 45 minutes while stirring occasionally. Veggies should be nice and tender.
04 - Want it less runny? Mix a couple of spoons of cornflour and water, then stir it in well.

# Notes:

01 - Blend a little to make it smoother.
02 - If possible, soak lentils for a couple of hours first.
03 - Add bay leaves or a pinch of thyme for more depth.
