Chicken Scampi Stuffed Shells (Print Version)

# Ingredients:

→ Main Components

01 - 3 cups shredded cheese (cheddar, mozzarella, monterey jack), split in half
02 - 12 oz large pasta shells
03 - 2 lbs chicken tenders, chopped into cubes
04 - 3 tablespoons olive oil

→ Chicken Seasoning

05 - 2 teaspoons smoked paprika
06 - 1 teaspoon ground cayenne
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1/2 teaspoon salt
10 - 1/2 teaspoon ground oregano
11 - 1/2 teaspoon black pepper, freshly ground

→ Scampi Sauce

12 - 2/3 cup heavy cream
13 - 1/3 cup grated parmesan
14 - 6 tablespoons butter, softened and kept aside
15 - 5 cloves garlic, finely minced
16 - 1 lemon, juiced and zested
17 - 1/3 cup water saved from cooked pasta
18 - 1 cup dry white wine
19 - 1/2 teaspoon crushed red pepper flakes
20 - 2/3 cup chicken broth
21 - 2 tablespoons chopped parsley

# Instructions:

01 - Save 1 tsp of seasoning mix. Toss chicken chunks in oil and seasonings. Sear them off in olive oil till they hit 165°F inside.
02 - Sauté garlic in butter until fragrant. Stir in wine and let it cook down. Add cream, parmesan, broth, and pasta water. Let it bubble and thicken. Shells should be cooked to firm at the same time.
03 - Combine chicken with half the shredded cheese in a bowl.
04 - Spread sauce across the bottom of a baking dish. Pack shells with chicken filling and place them on top. Pour leftover sauce all over the shells.
05 - Sprinkle the rest of the cheese on top. Bake at 375°F for about 15 to 20 minutes until bubbling.
