Over medium heat, cook the sausage and onions in a pan until browned. Get rid of the grease.

In a slow cooker, toss in the sausage you browned, cream cheese pieces, Velveeta cubes, and the can of RoTel juice and all.

Pop the lid on and let it cook on the LOW setting for about two hours. Stir it from time to time so nothing sticks.

Flip the setting to WARM and set it out with some tortilla chips for dipping.
