Cocoa Spiced Salmon (Print Version)

# Ingredients:

01 - 4 tablespoons melted butter.
02 - 1/2 cup fresh orange juice.
03 - 4 salmon fillets, about 4 oz each.
04 - 1 teaspoon unsweetened cocoa powder.
05 - 1/4 teaspoon ground cinnamon.
06 - 2 teaspoons white sugar.
07 - 1/4 teaspoon cayenne powder.
08 - 1 medium orange, sliced.
09 - 1 tablespoon packed brown sugar.
10 - 1/8 teaspoon ground black pepper.
11 - 1/8 teaspoon salt.

# Instructions:

01 - Set your oven to 400°F and let it preheat.
02 - Lay salmon in a flat dish, skin facing down. Pour in orange juice and let it soak for 15 mins.
03 - In a small bowl, combine both sugars with cocoa powder, cinnamon, cayenne, salt, and pepper.
04 - Take fish out of the juice. Lay it on a baking sheet with skin touching the parchment. Sprinkle the spice mix all over, top with orange slices, and brush on the butter.
05 - Bake the fillets for about 20-25 mins until the fish easily flakes apart.
