Toffee Date Cake (Print Version)

# Ingredients:

01 - 1 cup (200g) chopped pitted dates.
02 - 1 cup hot boiling water.
03 - 1 teaspoon bicarb soda.
04 - 1 cup (125g) plain flour.
05 - 1 teaspoon raising agent.
06 - 1/4 teaspoon table salt.
07 - 1/2 teaspoon cinnamon powder.
08 - 1/2 cup (115g) soft unsalted butter.
09 - 3/4 cup (150g) brown sugar, firmly packed.
10 - 2 big eggs.
11 - 1 teaspoon vanilla flavoring.
12 - 1/2 cup (115g) soft butter for the topping.
13 - 1 cup (200g) dark brown sugar for the topping.
14 - 1 cup (240ml) thickened cream.
15 - 1 teaspoon vanilla flavoring for the topping.

# Instructions:

01 - Let chopped dates sit in hot water with bicarb soda about 15-20 mins till they're mushy.
02 - Stir flour, raising agent, salt, and cinnamon together in a bowl.
03 - Beat butter with sugar till fluffy, drop in eggs and vanilla. Stir in soft dates, then gently add the dry mix.
04 - Dump into a greased 8-inch dish. Pop in a 350°F oven for 30-35 mins until a stick comes out without batter.
05 - Warm butter, throw in brown sugar and cream. Stir till it's all smooth, then mix in vanilla.

01 - You can make this earlier in the day.
02 - Best enjoyed hot with the sweet topping.
03 - Try adding a scoop of ice cream or some whipped cream if you want.
