Cheesy Kielbasa Soup (Print Version)

# Ingredients:

01 - 300g kielbasa, cut into small pieces.
02 - 750g peeled potatoes, chopped into cubes.
03 - 1 medium carrot, finely chopped.
04 - 1 diced onion.
05 - 2 celery stalks, chopped.
06 - 4 minced garlic cloves.
07 - 1.25 liters chicken broth.
08 - 300ml whole milk.
09 - 100g shredded cheddar cheese.
10 - 30g parsley leaves, chopped.
11 - 1 tablespoon olive oil.
12 - 1/2 teaspoon crushed chili flakes.
13 - Salt and black pepper to your liking.

# Instructions:

01 - Warm olive oil in a big pot. Cook the kielbasa until crispy. Take it out and put it aside.
02 - In the same pot with the leftover oil, cook the onion, celery, and carrot. Toss in garlic and chili flakes next.
03 - Pour in the broth with the potatoes. Let it boil, then lower the heat and cook for 10-12 minutes till soft.
04 - Mix some hot soup into the milk, then pour it back in. Add the sausage, stir in cheese to melt, and toss in parsley. Adjust the seasonings.
