Cozy Soup Recipe (Print Version)

# Ingredients:

01 - About 3 tablespoons of plain, unsalted butter
02 - Leeks, just the white and light green sections (4 large pieces)
03 - Three garlic cloves, smashed up
04 - Around 2 pounds of Yukon Gold potatoes
05 - Seven cups of chicken broth or vegetable stock—your choice!
06 - Two bay leaves
07 - Sprigs of fresh thyme
08 - One cup of heavy cream
09 - Fresh chives for topping
10 - Salt and black pepper, adjust to your taste

# Instructions:

01 - Rinse the leeks carefully, then slice up just the white and light green portions.
02 - In a pot, melt your butter and gently cook the leeks and garlic until they're soft and clear.
03 - Toss in the potatoes, broth, thyme, and bay leaves. Let it all simmer until the potatoes soften right up.
04 - Take out the herbs, then blend the soup—an immersion blender or regular blender both work great.
05 - Pour in the cream, warm it up, adjust the salt and pepper, and sprinkle chives on top right before serving.

# Notes:

01 - This can be served hot like regular soup or chilled like a classic Vichyssoise.
02 - It freezes well as long as you leave the cream out first.
03 - You're free to add any toppings you like for extra flavor.
