Potato Soup with Apples (Print Version)

# Ingredients:

01 - 2 large apples, about 1¼ pounds.
02 - 2½ pounds of peeled, chopped sweet potatoes or yams.
03 - 3 tablespoons of butter.
04 - ¾ teaspoon ground nutmeg.
05 - 6 cups of veggie stock.
06 - 2-3 tablespoons freshly squeezed lemon juice.
07 - 1 tablespoon of maple syrup, with extra for topping.
08 - 2 cups diced shallots or onions.
09 - ¾ teaspoon of ground cinnamon.
10 - 1 teaspoon salt.

# Instructions:

01 - Pop some butter in a big pot on medium heat. Stir in onions and cook for 3-4 minutes till they soften up.
02 - Toss the chunks of apples and sweet potatoes into the pot. Stir occasionally for about 3 minutes.
03 - Pour in 2 cups of broth to scrape up the browned bits, then add the rest of the broth, salt, and spices. Let it simmer gently, cooking for around 7-10 minutes until the potatoes are super soft.
04 - Once heat's off, carefully blend everything with an immersion blender until it's silky smooth.
05 - Taste it and fine-tune the flavor with maple syrup, lemon juice, and salt. Dish it out hot, and drizzle on extra maple syrup if you'd like.

# Notes:

01 - Yields about 9-10 cups of soup.
02 - Switch out butter for olive oil to make it vegan.
03 - Stash it in the fridge for up to 3 days or freeze for around 3 months.
