Stuffed Chicken Mozzarella Spinach (Print Version)

# Ingredients:

01 - 4 medium-sized chicken breasts (around 2 pounds).
02 - Pepper and salt, as you like.
03 - 1/4 cup regular-purpose flour.
04 - 2 tablespoons olive oil, split into two portions.
05 - 1 tablespoon of butter.
06 - 1/2 cup roasted red peppers from a jar, cut into thin strips.
07 - 1 1/2 cups baby spinach leaves.
08 - 3 minced cloves of garlic.
09 - 4 slices of fresh mozzarella cheese.

# Instructions:

01 - Slice chicken breasts almost open horizontally, about 2/3 deep. Sprinkle with salt and pepper, then coat with flour.
02 - In an oven-safe pan, melt butter with 1 tablespoon oil. Brown chicken for 2 or 3 minutes per side, then set aside.
03 - Cook spinach and peppers in the leftover oil for 3 to 5 minutes. Toss in garlic, stir another minute. Adjust seasoning, if needed.
04 - Stuff mozzarella slices and veggie mix into the chicken. Secure with toothpicks, bake at 375°F for 20 to 25 minutes, or until the internal temp reaches 165°F.

# Notes:

01 - Don't forget to take out the toothpicks before eating.
02 - Pre-roasted peppers keep things quick and simple.
03 - You'll need a skillet that can go in the oven.
