Get a big pot of water boiling with some salt. Toss in the pasta first, and halfway through, add the peas. Stop cooking about a minute before the package says it's done so you'll have that slight chew.

Pour olive oil into a big pan and heat it over medium-high. Add chopped bacon and onions, stirring often until they’re golden and the bacon’s crispy but not overdone.

After draining the pasta and peas, toss them into the skillet with the onion-bacon mixture. Then drop the heat to medium and pour in the heavy cream. Stir it all up, adding extra cream if it feels a bit dry.

Plate it up right away while it’s still steaming hot. Let everyone sprinkle on as much cheese as they’d like.
