Pear Arugula with Dressing (Print Version)

# Ingredients:

→ Balsamic Dressing

01 - 1/3 cup of good quality olive oil, preferably extra virgin
02 - 3 tablespoons of tangy balsamic vinegar
03 - 1 tablespoon of creamy Dijon mustard
04 - 1 garlic clove, mashed into a paste or finely chopped
05 - 1/4 teaspoon of fine salt
06 - 1/8 teaspoon of freshly cracked pepper

→ Main Salad Components

07 - 5 oz of peppery arugula
08 - Half a small red onion, cut into thin slices
09 - 3 ripe pears of your choice

→ Extras on Top

10 - 4-5 oz of creamy goat cheese
11 - 1 cup of chewy dried cranberries
12 - 1/2 cup of toasty pecans (let them cool before using)

# Instructions:

01 - To tone down the flavor, let the onion slices soak in icy water for about 10 minutes. Then, pour out the water and pat the onion dry.
02 - Shake up all the ingredients for the dressing in a mason jar until everything is combined.
03 - Lay the arugula in a big serving bowl, then arrange the pear slices and red onions on top.
04 - Scatter the goat cheese, cranberries, and toasted pecans over the top.
05 - Give the dressing another good shake and pour it over the salad right before you dish it up.

# Notes:

01 - You can swap pear slices with apple slices.
02 - Replace dried cranberries with fresh pomegranate seeds, if you want.
03 - Feel free to try another type of nut, like walnuts, almonds, or pine nuts.
04 - Experiment with different cheeses, such as feta, gorgonzola, or Parmesan.
