Cheesy Garlic Veggies (Print Version)

# Ingredients:

→ Vegetables

01 - 2 yellow squash, sliced into 1/2-inch rounds
02 - 14 ounces of tomatoes, cut in half
03 - 2 zucchini, sliced into 1/2-inch rounds

→ Seasonings

04 - 3 tablespoons of olive oil
05 - 4 cloves of garlic, finely minced
06 - Salt and pepper, add as desired
07 - 1 cup of Parmesan, shredded
08 - 1 1/4 teaspoons of Italian seasoning mix
09 - Optional garnish: chopped parsley

# Instructions:

01 - Set your oven to 400°F and line a baking tray with parchment paper.
02 - Combine the olive oil, minced garlic, and Italian seasoning. Let the mixture sit for 5 to 10 minutes to blend the flavors.
03 - Mix the vegetables with the seasoned olive oil.
04 - Lay the coated veggies on the baking sheet and sprinkle them with Parmesan.
05 - Bake in the oven for 25 to 30 minutes, until the vegetables are tender and the cheese has turned golden.
