Italian Sausage Parmesan Soup (Print Version)

# Ingredients:

→ Proteins & Base

01 - 1 tablespoon olive oil
02 - 1 lb Italian sausage, removed from casing
03 - 2 garlic cloves, finely chopped
04 - 1 small onion, diced

→ Liquids & Dairy

05 - 2 quarts chicken broth
06 - 1/2 cup heavy cream
07 - 1 (14.5 oz) can of diced tomatoes

→ Pasta & Cheese

08 - 1/2 cup Parmesan cheese, grated
09 - 1 cup small ditalini pasta

→ Seasonings

10 - Dash of salt and pepper to taste
11 - 1/2 teaspoon of dried oregano
12 - Fresh parsley to sprinkle on top
13 - 1/2 teaspoon dried basil

# Instructions:

01 - Heat olive oil in a pan, brown the sausage while breaking it into small pieces, then set aside.
02 - Using the same pan, cook the onions and garlic until they soften and smell amazing.
03 - Pour in the chicken broth, tomatoes, and dried herbs. Put the cooked sausage back in and let it simmer gently.
04 - Toss in the pasta and boil according to the directions on the package until it's perfect.
05 - Stir in the Parmesan and heavy cream. Adjust the seasoning if needed and top it off with parsley.
