Peanut Butter Pie No-Bake (Print Version)

# Ingredients:

→ Chocolate Cookie Base

01 - 14 full chocolate graham crackers (196g), or chocolate Teddy Grahams work too
02 - 7 tablespoons (99g) unsalted butter, melted
03 - 1 tablespoon of brown sugar

→ Rich Peanut Butter Filling

04 - 1 cup (240g) heavy cream, whipped
05 - 1 cup smooth peanut butter (270g)
06 - 1 teaspoon vanilla extract
07 - 8 oz (227g) cream cheese, softened
08 - 3/4 cup plus 2 tbsp powdered sugar (94g), divided

→ Decorations on Top

09 - Mini Reese’s cups
10 - Melted peanut butter to drizzle
11 - Choco chips or peanut butter chips for garnish
12 - Some melted chocolate for a drizzle effect

# Instructions:

01 - Preheat your oven to 325°F. Blend graham crackers and sugar in a food processor until they turn into fine crumbs. Mix in the melted butter, then press the mixture firmly into a 9-inch pie dish. Pop it in the oven and bake for 10-12 minutes until it smells delicious. Let the crust cool all the way down.
02 - Using a hand mixer or stand mixer, beat together cream cheese, peanut butter, and 3/4 cup of powdered sugar. Mix for about 3 minutes until it’s super fluffy and creamy.
03 - In a separate bowl, whip heavy cream until you start seeing it thicken. Toss in 2 tablespoons of powdered sugar and that teaspoon of vanilla, then keep whipping until the stiff peaks hold.
04 - Carefully fold the whipped cream into the peanut butter mix until it’s combined nicely. Spread it out evenly on the cooled crust. Stick the pie in the fridge for at least 6 hours or if you're in a rush, the freezer for 3 hours.
05 - Use a piping bag or snip the edge of a resealable bag to drizzle melted peanut butter and chocolate for a fancy look. Place a handful of mini Reese’s cups on the pie and sprinkle over peanut butter or chocolate chips for extra flair.

# Notes:

01 - Swap peanut butter out for almond butter if you want. You'll probably need to add more vanilla for that flavor boost!
02 - Keeps fresh in the fridge for around 3 days or in the freezer for a whole month.
