# Ingredients:

01 - 6 large eggs.
02 - 5 English muffins.
03 - 1 tablespoon salted butter.
04 - 4 slices bacon, crumbled.
05 - 1/2 teaspoon kosher salt.
06 - 2 tablespoons minced yellow onion.
07 - 2 cups whole milk.
08 - 1/8 teaspoon cayenne pepper.
09 - 1/4 teaspoon onion powder.
10 - 3 tablespoons all-purpose flour.
11 - 1/2 teaspoon garlic powder.
12 - 1 teaspoon black pepper.
13 - 1/2 pound ground pork sausage.
14 - 1 1/2 cups mozzarella cheese, shredded.
15 - 1 1/2 cups sharp cheddar cheese, shredded.

# Instructions:

01 - Fire up the oven to 425°F. Stir together the cheese blend.
02 - Slice the muffins in half and toast them lightly.
03 - Cook the sausage with the minced onion until it's nicely browned.
04 - Sprinkle flour into the sausage mixture, slowly mix in milk and spices, cook until it's thick and creamy.
05 - Melt butter in your skillet. Whisk the eggs until bubbly, cook till nearly set. Add the bacon at the end.
06 - Spread the gravy over the muffins. Layer on the eggs and bacon mix, and sprinkle the cheese blend last.
07 - Bake for about 6-7 minutes, then brown the top on broil for 3-4 minutes.
