# Ingredients:

01 - 1 cup chopped onions.
02 - 8 ounces mushrooms, sliced up.
03 - 3 tablespoons unsalted butter.
04 - 2 cups diced cooked chicken.
05 - 2 cups diced cooked potatoes.
06 - 1 cup milk or half-and-half.
07 - 2 tablespoons all-purpose flour.
08 - Kosher salt for seasoning.
09 - Black pepper, ground fresh, to your taste.
10 - 2 tablespoons melted unsalted butter (optional).
11 - 1 cup grated cheddar or Monterey Jack cheese (optional).
12 - 1 cup soft crumbs from bread (optional).

# Instructions:

01 - Set your oven to 350 F/180 C/Gas 4 and grease a 2-quart dish lightly.
02 - In a large skillet, melt the butter over medium heat. Add mushrooms and onions, cooking for about 8 minutes until they soften and take on a golden hue.
03 - Blend the flour into the skillet and cook for another 1-2 minutes. Gradually pour in the milk while stirring, letting it thicken, roughly 3-5 minutes. Toss in some salt and pepper to suit your taste.
04 - Take your ready baking dish and mix together the potatoes, chicken, and mushroom sauce.
05 - On top, sprinkle either the buttered breadcrumbs (mix crumbs and melted butter) or pile on shredded cheese.
06 - Pop into the oven for 25-30 minutes, or until it's bubbly and heated through.
