Get the oven ready at 400°F. Lay some parchment on your baking tray.

Mix together the sausage, shredded cheese, breadcrumbs, one egg, and thyme.

Stir the other egg with a small splash of water.

Roll out the sheets of puff pastry flat, then slice each one into a couple of long strips.

Run the sausage filling down the center of the strips. Spread mustard over one half and brush egg wash on the other.

Wrap the pastry around the sausage mix and close it up with the egg wash. Put it seam-side down.

Make light scores on top. Slice into pieces about an inch and a half wide.

Coat the rolls with egg wash and sprinkle the seasoning on top. Bake for 18 to 20 minutes until golden brown.
