01 - 1 cup of flour (all-purpose type)
02 - 1 cup of cornmeal
03 - 1 tablespoon of baking powder
04 - 1/3 cup of butter that has been melted and is unsalted
05 - 2 large eggs
06 - 1/2 teaspoon of regular salt
07 - 1/4 cup of plain white sugar
08 - 3 tablespoons of honey
09 - 1 cup of buttermilk

10 - 2 tablespoons of honey
11 - 1/4 cup of melted unsalted butter

# Instructions:

01 - Get your oven going at 375°F (190°C) and lightly grease a mini muffin tray.
02 - In a big bowl, toss together the flour, baking powder, sugar, cornmeal, and salt until blended.
03 - In a second bowl, whisk the eggs, melted butter, honey, and buttermilk until smooth. Pour this mixture into the bowl with the dry stuff and stir gently just until everything comes together.
04 - Scoop the batter into your greased muffin tin, filling each spot about 3/4. Let it bake for 12-15 minutes, or until the tops look golden brown, and a toothpick comes out clean when poked in the center.
05 - Mix the honey and melted butter together in a small bowl to make your glaze. Brush this over the warm cornbread bites.
06 - Serve them up warm—these make a great appetizer, snack, or side dish!
