Combine the warm milk with sugar in a big bowl, sprinkle the yeast over the surface, and wait 5 minutes for it to foam up.

Add flour, melted butter, and salt to the mixture. Knead for about 4 minutes by hand or use a dough hook until smooth. Add extra flour if the dough is sticky.

Put the dough into a greased bowl, cover it with a wet towel, and let it sit for 20–30 minutes so it can double in size.

Preheat your oven to 450°F and set up baking trays with parchment paper. Prepare the boiling water and baking soda mix.

Split the dough into 12 sections. Roll each into a rope about ¾ inch thick, then cut them into 1-inch-long pieces.

Boil the bites in small groups for 30 seconds and then transfer them to the lined trays.

Brush each piece with the egg-and-water mixture, sprinkle with salt, and bake for 12 to 14 minutes until nicely golden.
