Cozy Soft Pretzel Bites (Print Version)

# Ingredients:

→ Dough Base

01 - Brown sugar, 1 tablespoon
02 - Active dry yeast, 1 packet (0.25 ounces)
03 - Warm milk or water, about 1½ cups (heated to 110-115°F)
04 - All-purpose flour, 4½ cups (add extra if it’s too sticky)
05 - Sea salt, finely ground (1 teaspoon)
06 - Melted butter (2 tablespoons, plus some more for brushing)

→ Boiling Solution

07 - Baking soda, ⅓ cup
08 - Water, about 9 cups

→ Topping

09 - Egg, 1 large whisked together with a tablespoon of water
10 - Coarse sea salt or pretzel salt for sprinkling on top

# Instructions:

01 - Combine the warm milk with sugar in a big bowl, sprinkle the yeast over the surface, and wait 5 minutes for it to foam up.
02 - Add flour, melted butter, and salt to the mixture. Knead for about 4 minutes by hand or use a dough hook until smooth. Add extra flour if the dough is sticky.
03 - Put the dough into a greased bowl, cover it with a wet towel, and let it sit for 20–30 minutes so it can double in size.
04 - Preheat your oven to 450°F and set up baking trays with parchment paper. Prepare the boiling water and baking soda mix.
05 - Split the dough into 12 sections. Roll each into a rope about ¾ inch thick, then cut them into 1-inch-long pieces.
06 - Boil the bites in small groups for 30 seconds and then transfer them to the lined trays.
07 - Brush each piece with the egg-and-water mixture, sprinkle with salt, and bake for 12 to 14 minutes until nicely golden.
08 - Optionally, brush hot pretzels with more melted butter and serve while warm.

# Notes:

01 - Tastes best when eaten while still warm and fresh out of the oven.
02 - You can choose between milk or water for the dough base.
03 - Adding another coat of melted butter will give more flavor.
04 - You can knead by hand or use a stand mixer, whatever works best for you.
