Cheesy Wedges (Print Version)

# Ingredients:

01 - A pinch of cayenne for some heat.
02 - Two medium or large russet potatoes.
03 - 1 tablespoon of salted butter (14 grams).
04 - 3/4 cup of any kind of milk you like (whole, 2%, etc).
05 - 1 tablespoon of regular flour (8 grams).
06 - Cooking oil, about 2 tablespoons.
07 - Some salt, pepper, or seasoning salt.
08 - Shredded cheddar cheese, around 3 ounces (3/4 cup).
09 - Season with extra salt or pepper, if needed.

# Instructions:

01 - Turn the oven to 475°F. Slice unpeeled potatoes into 8 chunky wedges each after peeling. Mix wedges with olive oil. Lay them on a greased sheet. Sprinkle a little salt over them.
02 - Bake for 15 minutes, take them out, flip each wedge, and season again. Let them bake for another 10-20 minutes until golden and crispy. Keep an eye on them at the end!
03 - In a pot, melt butter on low heat. Stir in flour and let it cook a quick 30-60 seconds. Slowly pour in the milk, whisking all the time. Cook it for about 3-4 mins till thickened. Take it off the heat and stir in cheese bit by bit. Add some cayenne, salt, or pepper to taste.
04 - Pour the velvety cheese sauce over your freshly made fries and dig in immediately.

02 - Don’t crowd the fries on the tray.
03 - Add milk slowly so it doesn’t clump up.
