Protein Egg Bites (Print Version)

# Ingredients:

→ Protein Base

01 - 8 large egg whites, fresh
02 - 1/4 cup of cottage cheese

→ Vegetables & Cheese

03 - 1/2 cup of spinach, finely chopped
04 - 1/4 cup red bell pepper, diced small
05 - 1/4 cup of shredded cheddar (optional)

→ Seasonings

06 - 1/4 teaspoon garlic powder
07 - Salt and pepper as preferred
08 - Nonstick spray for your pan

# Instructions:

01 - Set your oven to 350°F (175°C) and coat a muffin pan with nonstick spray
02 - Take the egg whites, cottage cheese, and your seasonings and blend them till frothy and smooth
03 - Pour this mix into muffin tin cavities, filling each about two-thirds full
04 - Spread the chopped spinach, diced peppers, and optional cheese evenly into each cavity
05 - Bake them for 18 to 20 minutes, or until they’re firm and have a light golden edge

# Notes:

01 - These are awesome if you’re batch cooking and doing meal prep
02 - You can switch things up with different veggies or herbs
03 - They’ll last up to 4 days in the fridge
04 - You can freeze them if you want to keep them longer
