Avocado Chicken Mix (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 large ripe avocados
02 - 2 cups of chopped, cooked chicken breast (roughly 2 medium chicken breasts)

→ Fresh Vegetables

03 - Finely chopped celery (¼ cup)
04 - Finely diced red onion (¼ cup)
05 - ¼ cup of diced sweet red bell pepper
06 - Chopped fresh cilantro (2 tablespoons)

→ Seasonings

07 - Juice from 1 lime (about 2 tablespoons)
08 - A pinch of garlic powder (¼ teaspoon)
09 - Salt and pepper—add to your taste

→ Optional

10 - ¼ cup of Greek yogurt for a creamy texture (optional)

# Instructions:

01 - If your chicken isn’t cooked yet, season it lightly, cook it fully to 165°F/74°C, then dice it up once cooled.
02 - Take the avocado out of its skin, put it in a bowl, and mash it however you like—chunky or smooth.
03 - Toss the diced chicken, veggies, cilantro, lime juice, and spices into the mashed avocado.
04 - If you’re using Greek yogurt, stir it in at this step to make everything nice and creamy.
05 - Fold everything together gently. Give it a taste and adjust the spices or lime juice if needed.
06 - Eat it right away or pop it in the fridge for about 30 minutes to let the flavors mix together.
