Cheesy Chicken Garlic Bread (Printable Version)

Garlic loaf stuffed with chicken, red pesto, vegetables, and plenty of cheese. A quick, tasty dinner idea.

01 - 190g jar of red pesto
02 - 250g mix of cheddar and mozzarella
03 - 1 red onion, thinly sliced
04 - 2-3 garlic baguettes
05 - 1 red bell pepper, finely shredded
06 - 400g chicken fillet strips

# Step-by-Step Guide:

01 - Preheat the oven to 200°C/400°F. Cook the chicken in a little oil, flipping after 3-4 minutes on each side till golden.
02 - Sauté the onion and red pepper for about 12 minutes till they soften. Toss the chicken back in and mix with the pesto.
03 - Split each baguette down the middle and pop them in the oven for 7 minutes.
04 - Pack the baguettes with the chicken and veggie mix. Scatter cheese on top.
05 - Bake for 5-6 minutes till the cheese melts and turns golden.

# Additional Notes:

01 - Keep chilled in the fridge, good for 3 days.
02 - Wrap up and freeze to save for later.
03 - Warm back up at 180°C for 12-14 minutes.
