Eggnog Cookies Frosting (Print Version)

# Ingredients:

01 - 283g (2 cups) plain flour.
02 - 2 tsp of baking powder.
03 - A pinch of salt (1/2 tsp).
04 - Dash of cinnamon (1/2 tsp).
05 - Plus a bit extra nutmeg for sprinkling (1/2 tsp ground for use).
06 - 170g unsalted butter, softened (3/4 cup).
07 - 100g white sugar (1/2 cup).
08 - 100g packed brown sugar (1/2 cup).
09 - Two yolks from large eggs.
10 - Vanilla extract, about a teaspoon.
11 - Half a teaspoon of rum extract.
12 - Half a cup of eggnog (roughly 118ml).
13 - 113g butter, softened, for the frosting.
14 - 3-5 tbsp eggnog, for frosting.
15 - Rum extract, about 1/2 tsp, for the frosting.
16 - 360g powdered sugar (3 cups) for the frosting.

# Instructions:

01 - Turn the oven dial to 350°F to preheat. Combine cinnamon, nutmeg, some salt, flour, and baking powder in a bowl.
02 - Beat the butter with both kinds of sugar until fluffy. Add egg yolks, eggnog, rum extract, and vanilla. Slowly fold in the dry mixture.
03 - Spoon dough generously onto parchment-lined trays. Let bake 11-13 minutes.
04 - Leave the cookies to sit a moment on the tray before moving to a wire rack to cool completely.
05 - Whip the butter until light and airy. Gradually add powdered sugar, eggnog, and rum extract until it's thick but spreadable.
06 - Spread the frosting on the cool cookies, then sprinkle a little nutmeg on top.

# Notes:

01 - Measure flour by scooping and leveling.
02 - Stick to full-fat eggnog.
03 - Thicker cookies? Toss in a bit more flour.
