In a medium bowl, stir together flour, baking powder, and salt until well mixed.

Mix butter and sugar at high speed for about 3 minutes until fluffy and smooth. Toss in egg, vanilla, and almond extract if using, then beat another minute.

Slowly blend dry mix into wet ingredients on low. If it feels too sticky, add another tablespoon of flour.

Split dough in half, flatten each piece to 1/4-inch between parchment sheets. Put them on top of each other and chill for 1-2 hours.

Use cookie cutters on the cold dough. Pop in a 350°F oven for 11-12 minutes until edges turn slightly brown.

Let them sit for 5 minutes on the baking tray, then move to a cooling rack until totally cool before adding your favorite icing.
