Whip the butter and sugar together for 1-2 minutes until the mixture looks fluffy and pale. Add the flour and stir on the lowest speed until a dough forms.

Shape the dough into a ball, cover it with plastic wrap, and pop it in the fridge for at least an hour.

Roll the chilled dough out to a thickness of 1/4 to 1/2 inch. Use your favorite cookie cutters to create shapes, and chill the cut shapes while the oven gets hot.

Bake at 325°F for 10-12 minutes, just until the edges are a light golden color. Let the cookies cool completely before you dig in.
