Corn Fritters (Print Version)

# Ingredients:

01 - 1 egg, large size.
02 - 6 tbsp of regular milk.
03 - Corn kernels, 2 cups (around three whole cobs).
04 - 3/4 cup of chopped green onions.
05 - 1 cup grated sharp cheddar.
06 - 1 teaspoon of vinegar, apple cider type.
07 - Sea salt, 1 1/2 teaspoons.
08 - 1 teaspoon powdered onions.
09 - Half a teaspoon baking powder.
10 - 1/2 tsp garlic powder.
11 - 1/4 tsp cayenne pepper.
12 - Smoked paprika, 1/4 tsp.
13 - Black pepper, to your liking.
14 - 3/4 cup cornmeal.
15 - All-purpose flour, half a cup.
16 - Vegetable oil for frying.
17 - Extra chopped green onions.
18 - Sour cream for dipping.

# Instructions:

01 - Beat the egg with milk. Toss in the cheese, green onions, vinegar, and corn. Mix it gently.
02 - Add in the salt, black pepper, and all the spices. Stir it all up till it’s blended.
03 - Stir in flour and cornmeal together with the wet mix. Keep mixing till combined.
04 - Pour oil into a heated pan. Take 1/4 cup scoops of the mix, press gently into 3-inch circles. Fry each side for about 2-3 minutes. Don’t overcrowd the pan, make a few at once.

# Notes:

01 - Fresh corn delivers better flavor, but frozen works fine too.
02 - Leave space in the pan when frying to make flipping easy.
03 - They taste the best while warm.
04 - You’ll get around 10 to 12 of these fritters.
